Caldo...Caldo.....

We live in Cali....let's be specific N.Cali near the ocean.  We usually have some really nice spring like weather in April and May but in the last two months we have had super summer weather except for the little bit of fog here and there {which I do hate}we have been summered out.  Today it is going to be in the mid 80's and we are looking the same for the remainder of the week. In a way I am happy but in another way we have not seen a whole lot of rain and when we have little rain, winds and heat we have huge fires on this side of the USA. We have been living on much salad and light protein dinners. The below recipe is so easy but dang so good and my husband who is not a huge salad eater loves this protein infused mama salad. BTW the fries in the background are my little ones since she is not into the salad thing yet...but my girl loves the steak that I made and she polished off quite a bit. As you can tell we are all Vampires in our home. We do not eat much red meat in our casa but when we do we love the meat with bloody flavor.......

I added a bit of blue cheese to the mix it sets off the flavor of the meat 
Dressing 
1 large lemon, juice of
1/4 cup extra virgin olive oil
salt
fresh cracked black pepper
Salad
10 ounces top sirloin steaks or 10 ounces flank steaks
4 cups mixed greens, rinsed and drained
2 small zucchini, grilled
6 -8 cherry tomatoes, cut in half
1/2 cup fresh basil, sliced into ribbons you can do this with a pair of scissors wrap tighly then cut 
1 cucumber, thinly sliced
Prepare dressing. Set aside.
Preheat grill (or range) and cook zucchini on each side 2 to 3 minutes. Transfer to salad bowl. Grill meat until medium rare or cooked to desired doneness. Set meat aside.Place mixed greens including the zucchini in salad bowl and add a little bit of the dressing and toss gently. Arrange the mixture on two salad plates.
Slice steak on grain. Serve the steak over the prepared salad.

Quick and easy hot weather meal and it takes about one hour from beginning to end.....

I know its been hot here, its been in the low 90s up here. We have been turning on the air in evenings cause the house is like 80 degrees. Oh and have you guys been getting all that nasty wind?! So don't with that!!! I love meals like this on warm days. I will have to try out the salad and dressing. We haven't had a salad in awhile so this sounds good.
