Oh sweet baby Jesus....

I am in pain...not a little pain but holy shit I did not know that I had these muscles present in my body pain. Now I have been working out religiously  for about a 1 1/2 but this Saturday I decided to change it up a bit and take up boxing. Real time boxing not this cardio kickboxing thing were  you don't hit bags and have no gloves. This class we majorly hit bags and have gloves. I got out some major aggression and frustration out which was much needed. It was awesome. After the boxing I did TRX which if your unfamiliar with are these stretchy bands that are placed on hooks in the ceiling and you do some major body strength exercises. It feels like torture afterwards but when your doing them they feel super great especially if you have had bad back issues like I have had in the past. It helps not mess up your back like regular floor exercises would for me. I felt f8cking amazing afterwards but today not so much.....I also started acupuncture a few weeks ao and I am still going once a week. Now I am not one to believe in this tree hugging hippy stuff...AND yes I know that acupuncture has been a staple in Chinese medicine for years however if you saw where I lived you would get why I call it hippy skippy crap...I did not think it would work for me but you know what it has it is rebooting my system and I feel more relaxed than I have in a bit. Even my husband has noticed that have been a little less snarky and bitchy towards him. The below was hard but I did it man...I did it! I am going back next week for some more torture this is on top of my daily cardio work outs.

  Last night I decided to whip this up and let me tell you it was pretty fantastic.......easy and quick BLAMO a nutritious meal....Halibut steaks were on sale at Whole Foods and they de boned and fillet for me.


Note:  I did not have any parchment paper handy so I used aluminium foil worked just as great.

2 halibut fillets (6 to 8 oz ea)
2 tablespoons olive oil - this recipe was with butter but EVOO is allot healthier 
1 zucchini, julieenne sliced 
1 yellow squash, julieenne sliced 
1 large tomato, quartered

1 lemon 
salt, to taste
fresh ground black pepper, to taste

Directions:
Preheat oven to 375 degrees
Toss together , zucchini, yellow squash, tomato and salt and pepper.Place each halibut filet on a piece of parchment paper and top with vegetable mixture.
Place 1 tablespoon of EVOO on top of each.
Fold halibut in parchment paper and roll edges to seal. Place on a sheet pan and cook for 20 to 25 minutes.


That is it easy as pie and delish......I served with a side of baked asparagus and large couscous.....What more can you ask for!!!!

Oh man... I tried one class with those band things and was sore for days... Hurts so good! But I haven't gone back since haha.

Ohh thanks for the recipe! We've been eating a lot of fish lately and this will be a good mix up to my usual lemon/seasoning salmon
