Raspberry Upside Down Cupcakes - weight watcher points 3 for one cupcake {not bad}

1 1/2 cups fresh raspberries {I tried with blueberries} also yummy
Cooking Spray
1 9 ounce package lemon cake mix - Jiffy
1 large egg
1 1/2 tsp grated lemon grind
1/2 reduc. fat sour cream
1/2 cup powdered sugar
1 tablespoon fresh lemon juice

Preheat oven to 400
Arrange raspberries evenly in bottom of muffin cake pan
Combine cake mix, eggs, sour cream and 1 tsp.lemon rind
Pour batter over raspberries
Bake for 8-10 minutes or until cupcake spring back when touches lightly in center
Cool cupcakes in pan on wire rack for 2 minutes remove from from cups - I actually placed wire rack on top of muffin pan and flipped them all at once
Place cupcakes upside down on parchment paper and cool completely
While cupcakes cool , combine 1/2 tsp lemon rind , powdered sugar and lemon juice in a small bowl stirring with whisk. Drizzle glaze over cupcakes

Zucchini Tomato Frittata Weight Watchers Points 5 for 1 wedge

2 cups chopped zucchini - I added 2 more zucchini for "girth"
2 large eggs
2 8 ounce cartons egg substitute
1/4 pre shredded fresh Parmesan cheese - divided
1 cup fresh tomato
1/2 tsp salt
1/4 tsp fresh ground pepper
3 tablespoon chopped fresh basil
Pre heat broiler
Heat 12 inch ovenproof skillet over medium heat, coat with cooking spray - I love Pam olive oil
Add zucchini cook for 4 minutes {it takes longer than that I do not know who come up with theses "so called cooking times}. I cooked mine for about 15 minutes, until crisp -tender, stirring often
Comb. eggs, egg sub, 2 tablespoon cheese and next three ingredients in a medium bowl stirring with a whisk
add egg mixture to zucchini, cover and cook for 10 minutes until the egg mixture looks like it has set
Sprinkle with remaining 2 tablespoons cheese. Broil 4 to 5 minutes or until cheese melts. Sprinkle with basil.

I serve this with a side of mixed greens and a balsamic vinaigrette dressing

Voila the finished product Banana Nut Bread Recipe - No weight watchers here this is all full fat/fun my hubby will be taking this to work with him!

1 1/2 cups sugar
2 eggs
1/4 tsp baking powder
1/2 tsp baking soda
1 1/2 cups flour
3 large very ripe bananas
1/2 cups chopped nuts
1 tsp vanillaBlend together sugar, eggs and butter.  Add dry ingredients, which have been sifted together. Add ashed bananas, chopped nuts, and vanilla extract. Pour int greased loaf pan. Bake at 375°F degrees for 1 hour. Bake at 375 degrees for 1 hour

Friday Night - Pork Night
I changed this recipe up a little it called for lamb I used pork loin boneless chops

Pork Loin with Herbed Feta Orzo WW Points 9 1 chop & 1/2 cup orzo
1 cup uncooked orzo
4 gloves garlic
1 tablespoon dried oregano
1/2 tsp salt
1/2 tsp pepper
*4 6 oz pork loin chops
1/2 cup crumbled feta cheese with basil and sun dried tomatoes
2 tablespoons finely chopped drained oil packed sun dried tomatoes half
1 tablespoon fresh lemon
2 tsp olive oil

Pre heat broiler
Cook orzo according to package instruction, omit salt and fat. Drain past; place in med. bowl
Combine garlic, oregano, 1/4 tsp.salt and pepper rub over both side of park loin chops.
Seer the pork loin chop on both sides until nice and light brown I would say about 5-6 minutes
Then take the pan straight from burner to stove  - make sure you have an oven proof skillet
In oven at 300 degrees for about 10 minutes or until internal temp reads 155
Add remaining 1/4 tsp salt and pepper, cheese and next 3 ingredients to orzo, toss gently...
Serve pork over orzo
